This is a recipe that I have made with mince and have made purely with beans, there are many variations of this that can be made, but the one I am sharing is a vegetarian one and I tend to make a large pot of it that can be frozen and easily eaten when not in the mood to cook. Freezing it in portions also helps control the size of the portion you eat as once you try this you could eat a lot!”
1 Red onion (or as much or little as you like)
Garlic (probably 6 cloves as this is a large pot)
2 cans of tinned tomatoes
2 cans of tinned kidney beans
1 can of chick peas
2 packets of chilli mix
1 tablespoon of oil
1 teaspoon of sugar (optional)
2 packets of pre cooked rice
2 tablespoons of plain flour
Water as needed.
Slow fry the onion and garlic until soft.
Add the rest of the ingredients apart from the rice and flour.
Bring to the boil stirring until all mixed together. Add in the flour mixed with water to thicken as needed.
Simmer on the lowest heat for 10 minutes .
Add the rice 2 minutes from the end ensuring it is crumbled in as it can be clumped in the packets.
Stir as needed, then once beans are cooked and soft, portion into plastic containers.
Freeze once cold.
You can actually add any beans, I have added baked beans and black beans on previous occasions.
I add the rice so it is all one meal and needs nothing adding to it. This makes about 10 or 11 portions that are quite filling. Bear that in mind, the plastic containers I use contain 2 portions if filled!
