Now this idea came about from having purchased what I call a store cupboard lunch for when I am pushed for time. This cost only £1.69 from a lovely Thai ‘R’ Us shop. But got me thinking, I could probably make it cheaper so using the container from the shop bought one I decided to have a go. This comes in under £1 I should add and is just under 300 calories making it still a great lunchtime meal when in a rush, or an evening meal when you had dinner at midday.
Ingredients:
- 3 chopped spring onions (you could use any raw veg or mushrooms)
- 1 packet of udon noodles (4 packets for £2.19 not the cheapest but still cheap enough)
- 2 tbsp of a sauce. I chose yakatori, but actually sweet chilli, hoisin, any thick sauce would do. (a bottle from Waitrose is only £1.50 so it will be cheaper in other places)
Method:
- Place the raw veg in the bottom of the container.
- Add 1 tbsp of water (you can add more if you wish to have a less thick sauce)
- Open and place the noodles on top.
- Put 2 tbsp of sauce on top of the noodles.
- Loosely place eth lid on top and microwave full power for 2 minutes (this may be less depending on your microwave.
- Stir all ingredients together and enjoy.
