GF Chocolate Oat Muffins

Calories – 250 per muffin.

Ingredients:

  • 1 1/2 cup oat flour
  • 1/2 cup oats
  • 1/3 cup cocoa, dry powder, unsweetened
  • 1 tsp, baking powder
  • 1/2 tsp, baking soda
  • 2 large eggs
  • 1/3 cup, Honey (I used agave syrup)
  • 1/4 cup, oil – vegetable, canola (I used coconut)
  • 1 tsp vanilla extract
  • 1/4 cup pieces of walnuts
  • 1/4 tsp salt
  • 3 medium sized bananas

Method:

Preheat oven to 350°F (177°C). Line a muffin pan with 12 paper liners.

In a large bowl, combine oat flour, oats, cocoa powder, baking powder, baking soda and salt.

In a medium bowl, combine eggs, honey, oil and vanilla. Add to flour mixture, stirring just until blended. Spoon evenly (1/4 cup batter each) into prepared muffin pans. Sprinkle evenly with walnuts.

Bake 15 minutes (mine took 20), or until a toothpick inserted in center comes out clean. Cool on wire rack. Store leftovers in an airtight container. (Have put some in the freezer so will see how tat works!)
